Chicken Essentials & Preparation
Storing Your Chicken
Fresh Chicken
» Take home, refrigerate or freeze immediately in original packaging.
» Refrigerate up to 3 days at 40°F (4°C) on a plate that does not allow dripping.
» Freeze up to 1 year (although we have customers that have cooked 2 year old chickens and raved
about the results) at 0°F (-18°C) or colder.
Freezing Chicken
» Freeze in original packaging at 0°F (-18°C) or colder.
» Spread out as much as possible to speed up freezing process.
Left Over Chicken Storage
» Refrigerate as soon as possible. You can also freeze for later use.
» Left overs are great for sandwiches and chicken dishes (such as our favourites: curried chicken, or
salsa chicken chowder).
Cooking Your Chicken
Defrosting Chicken
» Our recommendation is to thaw in fridge, and never at room temperature.
» Our method is to place frozen chicken (still in bag) in sink filled with cold water, adding more water
as necessary. Once thawed, cook immediately.
Preparing Chicken
» Take the chicken out of the bag and drain the water.
» If cutting up, make sure all surfaces and utensils are clean (cutting board only for raw chicken).
» Wash hands thoroughly before and after handling.
» Raw chicken - wash cutting boards, utensils and surfaces well.
